Pickled Red Onions

If you’re looking for something interesting and delicious to add to your favorite summer meals, these pickled red onions are just perfect. Try them on sandwiches, BBQ, salads, vegetables, and more. enJOY!

  • ½ cup water
  • ½ cup apple cider vinegar or white rice wine vinegar
  • ½ cup sugar
  • 1 teaspoon salt
  • 2 red onions

Add water, vinegar, sugar and salt to a medium saucepan. Bring to a boil and stir to make sure sugar is dissolved. While the vinegar mixture is coming to a boil, peel and cut each onion in half then slice each half into 1/8-inch slices. Place onions in a heat resistant bowl or canning jar with lid. Pour hot vinegar mixture over the onions. Refrigerate for at least 2 hours before serving. These pickled onions will keep in the refrigerator for one week.
