Cranberry Apple Casserole
This dish is great for brunch, as a side, or for dessert served hot with ice cream. I especially like to serve it during the holidays.
- 3 cups peeled chopped Granny Smith apples
- 2 cups fresh cranberries
- ½ cup plus 2 tablespoons all purpose flour, divided
- 1 cup sugar
- 3 packages cinnamon and spice instant oatmeal
- 1 cup chopped pecans
- ½ cups firmly packed brown sugar
- ½ cup butter, melted
Preheat oven 350 degrees. In a bowl combine apples, cranberries and 2 tablespoons flour, toss to coat. Add sugar mixing well. Place in a 2 quart casserole. Combine oatmeal, pecans, remaining ½ cup flour, and brown sugar, add butter and stir well. Spoon over fruit mixture. Bake 45 minutes. Makes 10-12 servings.
