Turkey Pesto Roll Ups
Not only are these roll ups a great combination of flavors, but this recipe can be made ahead. In fact, it’s better made the night before, and make-ahead recipes are something I look for when putting together a tailgate menu. I’ve made this often for tailgates, and it’s always a hit.
- 6 large flour tortillas
- Basil Pesto
- Mayonnaise
- 12 slices deli turkey, sliced at a medium thickness
- 12 slices Provolone cheese, sliced thin
- Fresh Arugula
Spread a thin layer of mayonnaise on a tortilla. Spread 1 - 2 tablespoons pesto over the mayonnaise. Place two slices of turkey and two slices of cheese over the pesto followed by arugula (about a 1/3- 1/2 cup). Roll up the tortilla tightly so there are no gaps. Leaving the seam side down, trim off and discard the ends, slice each roll into ¾” slices.
