Toasted Cheese Sandwich

This simple but delicious recipe was something my mother used to make. Often she made it on Sunday evenings because it was an easy supper to put together on a day that was usually preceded by a big lunch. The slice of tomato, onion, bacon, and sharp cheddar made it a tasty treat. Served hot and open face, this sandwich is so delicious it made Sunday evenings something to look forward to. I’m sharing this recipe with you as I’m full of sweet family memories of my childhood. I especially like this recipe in the summertime when good tomatoes can be found and Vidalia onions are in season.

For the bread, my mother used just plain white bread, but this sandwich is so much better with really good bread. I’m talking freshly baked bread like a whole grain or sour dough, but my all time favorite is the English Muffin Bread from VG’s Bakery. We are so lucky to have VG’s Bakery in our community, it’s Farragut’s gem of wonderful goodness. If you’ve never tried VG’s English Muffin Bread. it’s fabulous with this sandwich or just toasted with a little butter and honey. Yum and enJOY!

  • One slice bread, about ¾” thick
  • Two tomato slices
  • One sweet onion slice
  • 1-2 slices cooked bacon, cut in half so the bacon will fit on the bread
  • 2 slices sharp cheddar cheese

Preheat oven to 400 degrees. Salt and pepper the tomato slices and place tomato on the bread. Break apart the onion slice into rings and place desired amount of onion on the tomato. Finish with layers of cooked bacon and cheese. Bake for about 10 minutes until the cheese has melted and the bread is toasted. enJOY!
