Shrimp Tacos
- 2 pounds uncooked shrimp, peeled
- 2 teaspoons cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon chipotle chili pepper
- 1 teaspoon chili powder
- ¼ teaspoon salt
- 1 ½ cups shredded lettuce
- ¼ cup chopped fresh cilantro
- 3 tablespoons freshly squeezed lime juice
- 8-10 soft tortillas
- 1/2 cup salsa
- ½ cup low fat sour cream
- 1 chopped fresh avocado
In a bowl combine shrimp with cumin, onion powder, garlic powder, chipotle pepper, chili powder and salt then set aside. In a separate bowl toss lettuce with cilantro and lime juice. Heat tortillas according to package directions. Heat a sauté pan on medium high heat after spraying with nonstick cooking spray; add shrimp and sauté until shrimp are pink and opaque, about 3-4 minutes on each side. Do not overcook the shrimp. To serve top each tortilla with lettuce, shrimp, salsa, sour cream, and avocado then fold tortilla in half.
