Shrimp Salad

This is the perfect salad to prepare on a summer day. There’s nothing worse than cooking dinner after a long hot day only to have your kitchen unbearably heat up too by turning on the oven and/or stove top. For this cool salad, purchasing already cooked shrimp from the grocery is the key. Put everything together with some special garnishes and you have a great dinner guaranteed to keep you cool!

  • 2 lb. cooked shrimp, shelled and roughly chopped
  • ½ cup celery, chopped
  • 1/3 cup sweet onion, finely chopped
  • ½ cup mayonnaise
  • Juice of one lemon
  • Salt and pepper to taste

In a bowl combine shrimp, celery, onion, mayonnaise, lemon juice, salt, and pepper. Refrigerate at least 2 hours before serving.

Serving Suggestion: Serve on a bed of your favorite lettuce. Garnish with sliced fresh tomatoes, boiled eggs cut in wedges, sliced cucumbers, fresh avocado, carrot slices, and crackers. This salad is also great between two slices of bread as a sandwich.
