Blue Cheese Slaw

Slaw:

  • 1 16 oz bag coleslaw mix
  • ½ cup blue cheese, crumbled
  • 1/3 cup sweet onion, chopped
  • 1/3 cup fresh flat leaf parsley, chopped
  • ½ cup pecans, chopped

Dressing:

  • ½ cup canola oil
  • ¼ cup freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 tsp sugar
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 1/8 tsp dried mustard
  • ¼ tsp celery seed

Combine slaw mix, blue cheese, onion, parsley and pecans in a bowl and set aside. Pour dressing over the slaw, toss, and serve.

Note: The dressing can be made a couple of days in advance and stored in the refrigerator.
