Peanut Butter Cookies

This Peanut Butter Cookie recipe is from my eighth grade home economics notebook. I’ve save the notebook all these years because the recipes are so good. Once I baked these delicious cookies for my mother, she had me baking them all the time. These cookies are now part of my tailgating menu every football season, and you can barely read the cookie recipe in my notebook for all the food spatters on the page. The recipe is well used because the cookies are well loved.

  • 3 ¾ cup sifted all purpose flour
  • 2 ¼ teaspoon baking powder
  • ¾ tsp baking soda
  • ¾ tsp salt
  • 1 ½ cup butter (3 sticks) soften to room temperature
  • 1 ½ cup sugar
  • 1 ½ cup peanut butter
  • 1 ½ cup brown sugar
  • 3 eggs well beaten

In a bowl sift together flour, baking powder, baking soda and salt and set aside. Cream butter and add sugar, peanut butter, and brown sugar gradually, creaming after each addition until light and fluffy. Add eggs and mix thoroughly. Add flour mixture gradually, beating after each addition until smooth. Drop mixture one teaspoon at a time and about two inches apart on to an ungreased baking sheet lined with parchment paper. Press with tines of a fork until very thin, making crisscross marks. Bake at 350 degrees for 8-10 minutes or until cookies are brown. Remove cookies with spatula immediately to cool on a rack.
