Crunchy Cereal Bars
This recipe came from my sister-in-law, Susan. She made them for a trip to the beach, and we all discovered a new favorite treat. In one bite you get crunchy, chewy, sweetness, peanut butter, chocolate and butterscotch. That’s a pretty great combination of flavors. Don’t you think?
- 2/3 cup sugar
- 2/3 cup light Karo syrup
- ¾ cup crunchy peanut butter
- 4 ½ cups Special K cereal
- 1 11 oz package Nestle Toll House butterscotch morsels
- 1 cup Nestle Toll House semi sweet chocolate morsels
In a large pot heat sugar and syrup until dissolved. Do not boil. Turn off heat and stir in peanut butter until smooth. Stir in cereal until completely mixed. Pour into a buttered 9”x13” pan pressing lightly with buttered fingers or buttered wax paper. For the topping, heat butterscotch and chocolate chips together in the microwave stopping to stir until melted. Spread topping over the cereal and let it to cool. Cut into squares.
