Ham & Cheese Breakfast Casserole

This is just a new take on the standard breakfast casserole. I can remember one of my mother’s recipes from the 1960s that used these same ingredients, but it was called a Mock Souffle.

  • 1 pound deli ham, sliced thinly and chopped into small pieces
  • 6 white bread cut into cubes with the crust removed
  • 1 ½ cups shredded Gruyere cheese
  • 1/3 cup chopped green onions
  • 6 eggs
  • 2 cups milk or cream
  • 1 teaspoon salt
  • ½ teaspoon freshly grated nutmeg

Preheat oven to 350 degrees.

Spray 9’ X 13” pan with nonstick cooking spray. Spread ham evenly in the pan, next add bread, cheese, and onions.

In a bowl whisk eggs, milk, salt, and nutmeg until mixed together. Pour egg mixture over the ham, bread, and cheese. Cover with plastic wrap and refrigerate overnight. Remove plastic wrap and bake at 350 degrees for 45 minutes until eggs are set.
