Grits Casserole
I always just assumed this recipe would be served for breakfast or brunch, but many years ago I attended a fancy ladies’ lunch where the menu was a chicken casserole, salad, and a cheese grits casserole very similar to this recipe. That’s when I realized this casserole would be good as a side for all types of main dishes. I especially like to serve this when I do a fish fry. Cheesy grits, fried catfish, good slaw, and hushpuppies- you can’t get anything better.
- 6 cups boiling water
- 1 ½ cups grits
- 1 pound Velveeta Cheese
- 2 teaspoons savory salt
- 2 sticks butter
- 2 teaspoons salt
- ½ teaspoon garlic powder
- Hot sauce to taste
- 3 eggs, beaten
Bring water to a boil and add grits. Cook Grits until thick, stirring with a whisk often to prevent clumping. Add remaining ingredients and pour into a 9X13 inch lightly greased casserole pan. Bake one hour at 350 degrees. Make 10-12 servings.
