Breakfast Egg Casserole

This is a good basic recipe for a breakfast egg casserole. I like to serve this with my Crockpot Grits and Poppyseed Cake. All of these recipes can be made ahead, so your next brunch will be so easy to throw together.

  • 6 eggs
  • 2 cups milk or cream
  • 1 tsp salt
  • 6 slices white bread, cubed with crust removed
  • 1 pound breakfast sausage
  • 1 ½ cup shredded sharp cheddar cheese

In a skillet cook sausage on medium high heat until browned. Drain. Spray a 9” x 13” pan with nonstick cooking spray and layer in sausage, bread, and cheese. In a bowl whisk the eggs, milk, and salt until mixed together. Pour egg mixture over sausage, bread and cheese. Refrigerate overnight. Bake at 350 degrees for 45 minutes until eggs are set.
