Bacon & Cheese Muffins

These tasty muffins are light and buttery. You can leave out the bacon, cheese, and chives if you want a plain muffin, but I was asked to come up with a recipe on a segment of Live at Five at Four using bacon because the show was featuring Benton’s bacon. I remembered these fabulous muffins and thought the addition of bacon would be great. They are a nice nibble with drinks, perfect for a brunch, or a quick and easy muffin you should have in the bread basket at all your dinner parties.

  • 1 cup (two sticks) butter, softened to room temperature
  • 1 cup sour cream
  • 2 cups self-rising flour
  • 4-5 slices bacon, cooked and crumbled
  • 1 cup cheese, shredded
  • 2 tablespoons fresh chives, chopped

Preheat oven to 400 degrees. Using an electric mixer, cream butter and sour cream together. With the mixer on low speed, gradually add flour. Then add bacon, cheese, and chives until ingredients come together. Place spoonfuls of the batter in mini muffin pans sprayed with a non stick cooking spray. Bake for 15- 20 minutes, or until golden. Serve warm. Yield 48 muffins.
