Tennessee Caviar

In the south Blackeye Peas are like caviar to us, and that’s why I love the name of this dip. I’ve named it for my state, but my mother called her version Georgia Caviar after her home state. It’s a fun dip to serve that’s perfect for tailgating especially served with my favorite chip for dipping, Fritos Scoops. enJOY your “caviar” while you and your friends cheer on your favorite team.

  • 2 15 oz cans Blackeye Peas, drained and rinsed
  • ½ cup chopped sweet onion, finely chopped
  • 1 cup fresh bell pepper (mix colors- yellow, orange, and green) finely chopped
  • 1 7 oz jar diced pimentos, drained
  • 1 fresh jalapeno pepper, seeds removed, finely chopped
  • 2/3 cup Italian salad dressing (I use Kraft Zesty Italian)
  • Fritos Scoops for serving

Combine all ingredients except the Fritos and stir well. Refrigerate overnight. Serve with Fritos Scoops.

Note: This recipe can be made two days in advance. Keep refrigerated in an air tight container.
