Pecan Date Cheese Wafers

I love the idea of sweet dates, pecans, sharp cheese, and a touch of red pepper together as a wafer. I think you’ll enjoy these savory nibbles especially during the holidays. They’re festive, fun, and will be gone in a flash.

  • 1 ½ cups butter, softened
  • 1 (16 oz) package sharp cheddar cheese, finely shredded
  • 1 cup finely chopped pecans
  • 1 cup finely chopped dates
  • ½ teaspoon ground red pepper
  • 4 ¼ cups all-purpose flour

In a large bowl, beat butter, cheese, pecans, dates, and red pepper with a mixer at medium speed until well combined. Gradually add flour, beating just until combined. Roll dough with your hands to form a log about 1 ½” diameter, wrap in plastic wrap, and refrigerate for 2 hours. Preheat oven to 350 degrees. Line baking sheets with parchment paper. Slice dough log into ¼” slices and place on prepared pans.

Bake until golden brown, 12 to 15 minutes. Remove from pans, and let cool completely on wire racks. Store in an airtight container for up to 3 days. Can be frozen.

Note: This recipe can be made two days in advance. Keep refrigerated in an air tight container.
