Cheese Drops

What wonderful memories come to mind when I see this recipe. My mother made these Cheese Drops for all kinds of occasions. Sometimes they were for a Christmas gift or a bridge party, but they were always gobbled up quickly. Now I like to make these Cheese Drops for tailgating.

  • 1 cup butter, (2 sticks), softened
  • 2 cups grated sharp cheddar cheese
  • 2 cups all-purpose flour
  • 1/2 to 1 teaspoon cayenne pepper
  • 1/2 teaspoon kosher salt
  • 2 cups Rice Krispies

Preheat oven to 350 degrees. In the bowl of an electric mixer combine first five ingredients until smooth. Gently mix in cereal. Form dough into small balls about an inch in diameter, place on a cookie sheet lined with parchment paper and sprayed with nonstick cooking spray, and flatten with a fork making a crisscross pattern. Bake until light brown, but not too brown, about 18-20 minutes. Place on a rack to cool. Store in an airtight container with a sheet of wax paper between each layer. Will keep for several days or can be frozen. Makes 3 ½ dozen.
